Gluten-Free Christmas Treats

People who have celiac disease, or a gluten intolerance or allergy, often feel left out because many holiday foods contain gluten. Here is a quick look at some gluten-free alternatives to holiday foods.

It’s no fun to walk through a grocery store and be surrounded by holiday candy and baked goods that you cannot eat because they contain gluten. Many people have a sentimental attachment to at least one or two holiday treats. Fortunately, there are some companies that make packaged holiday foods that are gluten-free.

Spangler Candy makes gluten-free candy canes. They are red and white striped and peppermint flavored. Each box contains 12 candy canes. They are sold in a pack of three boxes. This gives you plenty of candy to share. Ingredients include:

Sugar, corn syrup, natural flavor, color added (includes Red 40)

There is also an allergy statement that says: These Christmas candy canes do not contain peanuts, tree nuts, milk, eggs, wheat, soy, or gluten. It has been manufactured on dedicated equipment. There is a trace amount of soy oil on the lubricant that we use in our cooking kettles. This soy oil has been refined, bleached, and deodorized and all of the proteins have been removed.

MI-DEL makes All Natural Gingerbread Men Cookies that are gluten-free. They are sold via Amazon, and appear to be limited edition. Amazon doesn’t list the ingredients. It might be safer to try and find them in your local grocery store and read the ingredient label before you buy them.

Mi-Del also makes Gluten-Free Ginger Snaps. They are round cookies that taste similar to gingerbread. The ingredients include:

Gluten-free flour (corn flour, soy flour, potato flour, rice flour, corn starch, potato starch, xantham gum), organic dehydrated cane juice, canola oil, unsulphured molasses, ginger, soy lecithin (used as an emulsifier), eggs, baking soda, sea salt, natural flavor.

Note: This product contains egg and soy. It also has an allergy warning on it’s package: Processed in a facility that also processes or handles wheat, milk, peanuts, and tree nuts. MI-DEL Gluten-Free products are routinely tested using the ELISA method to ensure gluten-free status as determined by the World Health Organization.

Would you prefer to make your own gluten-free baked goods at home? There are plenty of gluten-free mixes to choose from. Pamela’s is a well known name for gluten-free pastry mixes. You also can work from scratch by starting with a gluten-free flour (such as one from Bob’s Red Mill).

What to do with Thanksgiving Leftovers

What are you going to do with the leftovers? If you keep food safety in mind, there are plenty of ways to distribute and use up Thanksgiving leftovers.

Food Safety
Food Safety News notes that leftovers should be refrigerated within two hours of preparation. Food that has been left out of the refrigerator for more than two hours could be unsafe to eat. Keep this in mind as you are clearing away the remains of Thanksgiving dinner.

Leftovers that have been safely refrigerated (within two hours of preparation) should be eaten as soon as possible. They will only last about three or four days. Obviously, if something looks or smells “wrong” – don’t eat it!

Ready to eat the leftovers? They should be reheated to 165 degrees F. Use a food thermometer to check the internal temperature. Gravies should be brought to a rolling boil.

Share with Guests
There are many people who love leftovers. Make a general announcement that you will be happy to send some leftovers home with guests. Those who want them will take you up on that offer!

Follow the food safety guidelines. For best results, take the foods that the guest wants to take home out of the refrigerator shortly before he or she is ready to go home. Package up a portion for your guest to take home. Rest assured that the guests who requests leftovers will actually eat them. That’s better than having all that food go directly into the trash.

Make a Specialty Sandwich
This is the time of year when sandwich shops offer seasonal sandwiches that include many of the foods that people eat at Thanksgiving dinner. Instead of spending money on those, why not use up your leftovers and make your own version?

You will need some bread. Pick whatever kind you like best. Add in slices of turkey, some stuffing, and some cranberry sauce. Some people may want to add a little gravy to the sandwich. You don’t have to be an amazing chef to whip up some sandwiches for you and your family to enjoy.

Try a Casserole
One way to use up Thanksgiving leftovers is to present them in a different way. People get bored of turkey sandwiches after they’ve had a few. You can put the leftover turkey, stuffing, mashed potatoes gravy, green beans, and maybe even the cranberries in a casserole. Not sure how to do that? Thanksgiving Foods for Vegans

Harvest!Many of the foods that are traditionally served at Thanksgiving dinner are not suitable for vegans. This will make it really difficult for your family members or friends who are vegan to find something to eat on Thanksgiving. One option is for a host to serve an entirely vegan dinner. Another is to include several vegan alternatives to the traditional foods. It’s not as hard to do as you may think!

People who are vegan do not eat meat. They also do not eat any animal by-products. In other words, they do not consume foods or drinks that contain eggs or milk. Some vegans do not eat honey. Instead, they eat plenty of vegetables and fruits.

Vegan Alternative to Turkey
Vegans do not eat meat. Obviously, the Thanksgiving turkey is meat. One simple alternative is to serve Tofurkey either instead of the turkey or along with it. The ingredients in Tofurkey are:

Organic tofu, vital wheat gluten, and expeller pressed non-GMO canola oil.

The texture of Tofurkey is described as “meat-like”. It should be noted that is not safe for people who have celiac disease (or a gluten allergy or intolerance) because it contains wheat gluten.

Vegan Alternative to Stuffing
At first glance, one might assume that stuffing is vegan. Some stuffing recipes call for meat. Many do not. That being said, all versions of stuffing contain bread (which has both milk and eggs in it). Some stuffing also calls for an additional egg to be mixed into it.

Fortunately, there is a alternative! Savvy Vegetarian has a recipe for Vegan Stuffing. Ingredients include:

10 cups of ½ inch bread cubes (Pick a bread that doesn’t have milk or eggs – like ciabatta.), olive oil, minced fresh garlic, finely chopped onion, finely chopped celery, minced fresh parsley, dried rubbed sage leaf, dried thyme leaf, salt (optional), black pepper, 2-3 cups of vegetable stock (or water or veggie bouillon cubes).

Vegan Alternative to Sweet Potatoes
Sweet potatoes, all by themselves, are vegan. They stop being vegan when they include butter or milk and are served with marshmallows on top of them. Marshmallows contain gelatin, which is made from collagen that comes from animal by-products.

The VeganYumYum blog has a recipe for Candied Lime Sweet Potatoes. They are thinly sliced instead of mashed. Ingredients include:

Sweet potatoes, sugar, molasses, salt, fresh lime juice, zest from a small lime, minced ginger, black pepper, Earth Balance, and parsley or cilantro for garnish.

Thanksgiving Foods that Might Contain Eggs

EggsThanksgiving is a holiday that many people celebrate by having a huge dinner with their families. There are specific types of food that people expect will be served. Of course, there is also room for non-traditional foods to be included as well. All of it can potentially be dangerous for people with food allergies. Here is a quick look at some Thanksgiving foods that might contain eggs.

Dinner Rolls
Without a doubt, the dinner rolls served at Thanksgiving dinner will contain egg. Unfortunately, egg is a main ingredient in bread. If the person who is hosting Thanksgiving dinner picked up pre-made rolls at the grocery store it is extremely likely that the rolls contain eggs.

Stuffing
Odds are the stuffing served at Thanksgiving dinner also contains eggs. One of the ingredients in stuffing is bread (or croutons). Each can contain eggs. In addition to that, many types of stuffing call for an additional egg to be mixed into them.

Mashed Potatoes
This one is “iffy”. Mashed potatoes, made from scratch, should not contain egg. They should be mostly made of potato with some butter or milk mixed in. The problem is that many boxed mashed potatoes do contain egg. It is part of the pre-packaged mix and impossible to separate out.

If you feel comfortable, ask the host if the mashed potatoes came from a box. If the host understands food allergies, he or she will not be offended. It is possible the host will still have the box that you can look at and read the ingredients. When in doubt, skip the mashed potatoes.

Sadly, pumpkin pie contains egg. It is in the mixture of the pie filling and may also be in the crust. One way to get around this problem is to make your own egg-free pumpkin pie and bring it to Thanksgiving dinner to share with everyone.

Snack Trays
Sometimes, it takes a while before Thanksgiving dinner is ready. Many hosts will provide a tray of snacks for guests to munch on while they wait. The fresh vegetables are egg free. However, the veggie dip may not be. Some are made with mayonnaise – which definitely contains egg.

The crackers on the snack tray are most likely made with egg as one of the ingredients. Does your family serve deviled eggs as a pre-Thanksgiving dinner snack? It goes without saying that those are not safe for people who have food allergies. Beware of cross-contamination. Those eggs may have touched other food that normally would not contain eggs.

The “No Eating Out for a Month” Challenge This one is self-explanatory. The goal is to avoid eating out for an entire month. This might be super easy for people who enjoy making meals at home. People who really enjoy dining out, or ordering food to be sent to their home, may struggle with this one. It’s worth a try because spending money on take-out is more expensive than buying groceries. The Pantry Challenge This one is a variation of the “No Eating Out for a Month” challenge. The goal is to use up all of your groceries before you buy more. It forces you to try and remember why you bought a food or beverage that you don’t know what to do with, and gives you the opportunity to find a way to use it. The one exemption to this challenge is the foods that have expired. Don’t eat them! Throw them in the trash. The “No Spend” Challenge Make a goal to avoid spending money during an entire weekend. The only exemption in this challenge is that you are allowed to pay bills. This challenge is interesting because it requires creativity. You must be creative and find workarounds for problems that you would typically solve by spending money. You may have a different outlook on spending after finishing this challenge.
