What could be better on a cold day than a hot crockpot full of soup?  Try some of these slow cooker soup recipes.Cold days call for hot soup. Wouldn’t it be great to have a crockpot full of soup all ready and waiting for you after a hard day at work? Here are a couple of great crockpot recipes for soup. These recipes call for little preparation. Set it, forget it, enjoy it later!

Slow Cooker Soup Recipes

Two Potato Vegetable Soup
Betty Crocker has a recipe for a tasty soup that is safe for vegetarians to enjoy. You will need:

* 1 large, dark-orange sweet potato (peeled and cut into 1/2” cubes)
* 1 medium russet or baking potato (cut into 1/2” cubes)
* 1/4 cup chopped onion
* 1 can (14.5 ounce) diced tomatoes with basil, garlic, oregano (undrained)
* 2 1/2 cups water
* 3/4 teaspoon of salt
* 2 vegetarian vegetable bouillon cubes
* 2 cups of frozen peas and carrots (thawed)

Mix everything (except the peas and carrots) into your crockpot. Cover it. Cook on low setting for 8 to 12 hours. About 15 minutes before you serve it, stir in the thawed peas and carrots. Cook on low setting for 15 minutes more (or until peas and carrots are fully heated).

Cabbage Beef Soup
This recipe came from Allrecipes. This one is for people who eat meat. Vegetarians will need to alter this recipe a bit. You will need:

* 2 tablespoons vegetable oil
* 1 pound ground beef
* 1/2 large onion (chopped)
* 5 cups chopped cabbage
* 2 (16 ounce) cans of red kidney beans (drained)
* 24 ounces of tomato sauce
* 4 beef bouillon cubes
* 1 1/2 teaspoons ground cumin
* 1 teaspoon salt
* 1 teaspoon pepper

Heat the oil in a large stockpot over medium high heat. Add ground beef and onion. Cook until the beef is well browned and crumbled. Next, drain the fat out of it, and put the beef into the crockpot. Add cabbage, kidney beans, water, tomato sauce, bouillon, cumin, salt and pepper. Stir to make the bouillon dissolve. Cover it. Cook on high for 4 hours (or low 6 to 8 hours). Stir occasionally.
